I have applied to a HYPSM school, mainly thinking about my GPA, EC's, class rank, etc. However, I am starting to believe that my SAT score is not solid enough for acceptance (1910 with 1250 composite). I mean, some of the people applying to HYPSM may have a 2400 superscore - which I honestly find flabbergasting.
Any motivation, comments, chancing perhaps, or anything else.?

A 1910 is way below the 25th percentile for HYPSM schools - that is the reality. Your test scores will inevitably put you at a disadvantage compared to fellow applicants, but it is important to remember that the admission process is very holistic.

Do you come from a single-parent, low income family? Are you a first generation college student? Are you unable to exert as much time/energy into studying for standardized tests as your classmates because you need to work a part-time job? Are there any unique circumstances that account for your below-average test scores?

If there is, then that’s great. If not, I recommend you spend more time studying so you can retake.

Yeah, I’m afraid your fears are not unreasonable. HYPSM are extremely unlikely to take an unhooked student in that range.

if you have amazing extracurriculars it is not impossible but without something spectacular the top schools probably won’t accept you. they usually expect ~2200 give and take 100
