Am I on the right track for NYU/Amherst?

So I'm a freshman as of right now. (Will be a sophomore from 2012-2013.)
I attend a pretty large public HS in California. However, I applied and auditioned
for a Conservatory charter school's writing program. It's a school for 'the Arts' and is ranked as the number one charter school in the county/area.

In addition to my regular 215 credits, I will have 96 credits (32 a year x 3 years) by the end of my HS career.. IF I continue to attend said school until senior year. I may or may not transfer back into public. It depends on how rigorous I find the school's curriculum.
I will be taking in-depth classes like Dark Literature, Global Poetry, African-American Folklore, among other granola topics.

OPTIMALLY: best-case scenario, I would like to enter college with a concentration or major of Business, Finance, Marketing, or Public Relations.
..Or Biomedical Engineering, since I'll have taken a lot of science by senior year as well.
My schedule for senior year will look (most probably) like this:

AP Calculus OR AP Statistics (maybe both) (undecided)
AP Spanish Language
AP Literature and Composition
AP Economics OR AP Macroeconomics + Microeconomics
AP Physics
If I don't take AP Statistics, academic elective OR the 2nd/3rd year of French (depending on whether I independently study or not)
Academic Electives to choose from: (Help me on this?!?!) Philosophy, Psychology (No Honors/AP available), Zoology, Anatomy, Journalism

ECs:
2 years of Fine Arts center volunteering (Jr. Instructor)
2-3 years of volunteering at a hospital (possibly Surgery branch, idk)
4 years of Renaissance Fine Art classes
7 years of classical private piano lessons
4 years of local library branch volunteering
3 years of recreational swimming

Awards:
California Scholastic Federation (Not really that impressive)
GATE (Gifted and Talented Education, not really that impressive, either.)

Thanks in advance, and if no one replies, ah, well. I tried!
