Im a junior and currently looking at prospective colleges.
American University has gotten my interest and I would like any thoughts you have.
I think I have a good chance of getting in. My SATs were a 2200 (CR 740, M 700) and my GPA is 3.7 UW, 4.05 W.
I want to be a political science major, and I have a long list of ECs including sports, school clubs, and multiple campaign internships.
Do you think I would get in? Do you have any thoughts on the school itself?

If you decide to apply, make sure you demonstrate strong interest in AU in whatever ways are available to you.
I concur with what @premature_gray said. Two of my friends were waitlisted this year with similar stats to yours. Both viewed American as a safety. Only when they were waitlisted did they start emailing their admissions rep, campus visit, etc. Neither got off the waitlist. One didn’t get into any of her reaches or matches, waitlisted at American and only got into one (safety) college. The other was accepted at GW (but had hopes for Georgetown, Emory, Tufts, etc.).
Ditto - demonstrated interest is very important at AU. This past year the forums were littered with students at your stats or above (which is in the top quintile of applicants) who were denied or wait listed. Get to know your local rep and stay in contact with him/her. Go to local admission events. Visit the campus if feasible.
