Just got accepted for transfer, how is the program overall? I’m on the fence where I want to go and I’d love some feed back on class size, overall difficulty, hiring / career connections, how the professors are, any information helps.

you can get class size from the online schedule of classes. According to the page at https://engineering.ucsb.edu/undergraduate they’ve been awarding about 50 ChemE degrees per year so the classes shouldn’t be huge.
some people will tell you “UC prepares you for research, CSU to enter the workforce”. Don’t believe them. First off, undergrad engineering is acredited by ABET so you take the same courses no matter where you go. Second, UC students (and Cal Poly SLO which is at the same level) enjoy a level of respect from employers that may not be equally shared by all CSU kids. Employers know the standards to get in and stay in are higher. You are at no disadvantage looking for work with a UC degree.
frankly, though, the school isn’t what’s going to deliver your future unless you go someplace like MIT or Stanford. Just about everywhere else the difference between the kids choosing from lots of offers and those that aren’t is what they did in school. Study hard to get good grades, get an internship after junior year (or consider taking an extra year to graduate and get a coop position) and you’ll be set.
