The AP Literature course at my school is combined with the Writer's Craft. I'm just curious as to what you exactly you do. AP Literature, I'm well aware that you write critiques and essays. Writing poetry, short stories, etc are also components of this course?

No, not in my experience, and you certainly don't have to write poetry or short stories on the exam. The exam consists of multiple choice questions, two essays on poems/ literary excerpts, and a final essay in which you apply the question to a literary work of your choice.
