AP Psychology or Spanish 3?

So, I know this may seem like a really silly question, but does taking a third year of a foreign language really matter that much? I want to take AP psychology but I don't have room in my schedule if I take Spanish 3... If you were in my shoes what would you do?

My Stats (through junior year):

1/470 Class Rank
4.7 GPA
250+ hours volunteering with Special Olympics
Worked on numerous houses with Habitat for Humanity
Volunteer regularly with FoodShare, Boys and Girls Culb, etc.
Varsity Golf all four years (my passion, when I'm not in school I'm on a golf course)
2140 SAT (unfortunately my AP test scores were terrible, 4 on AP Bio and AP Euro)

I also plan to volunteer at the hospital over the summer

I'd really like to attend either UCSD or Brown and play golf for them.

Always start with the college website, for example B:

These are not requirements, but considering how competitive admissions is becoming, it’s good to have as few weak areas as possible. Of course if you’re a recruited athlete, that adds another dimension to the admissions process, and one which I’m not familiar with.

I don’t know the UC recommendation/requirement for FLs, but someone around here should.

Take Spanish 3, if you’re looking to apply to top schools.
