Applying to UMN - Twin Cities, chances?

Hi everyone, as the thread title says, i'm applying to UMN as soon as i take the TOEFL (a couple of weeks), and wanted to hear from you about my chances of being admitted.

First, hard facts first

International Student (Hispanic white, i'm from Spain)

Non traditional (31 years old)

First generation graduate (parents didn't go to college)

3,44 unweighted GPA from High School

waiting to take TOEFL

didn't make SAT, advised by an admissions officer from UMN as i am a transfer student (more on that later)

Actually, and that worries me, i only could complete a couple of subjects on college, so i'm not sure if not doing the SAT was a good idea.

Extracurriculars:

played in the local handball team for 3 years

played in the local rugby team for 1 year

hold a green belt in tae kwon do

hold a black belt 1st dan in japanese jiu jutsu

have participated in cultural exchanges in Italy, Germany and UK

Have volunteered for fire prevention during summer

Have colaborated with local government to promote alcohol free alternative leisure activities for teens

have colaborated in several self defense seminars for law enforcement officers

I'm treasurer of a non profit organization that promotes leisure activities involving safe and sane environments (ranging from airsoft to sports to board games).

Work Experience:

I've worked as technician/manager in a small networking solutions business

I've worked as barista in several clubs

I've worked in debris cleening tasks

I've "worked" as the main caretaker of my maternal grandparents for the last 6 years (almost full time, obviously unpaid).

Now let's put a little context. When i finished high school i attended for less than a semester classes at my local civil engineering college, to appease my parents; but withdrew since i hated it and put myself to work. I've always wanted to study computer science, and finally got my shot on 2010 Fall. Unfortunately, two months after the start of the classes my grandfather was diagnosed with cancer and his health took a turn for the worst. So, i had to withdraw (could complete a couple of subjects) in order to attend him to the best of my abilities. When he passed away, i continued taking care of my grandmother while on therapy for depression. Nowadays i'm much better and my grandmother has decided to go to a retirement home, so i've decided to try to fulfill my dream of studying computer science, and in the States nonetheless.

I'll work in my essay about all the hardships i've had to endure and what i seek to accomplish at the end of the road (quite bumpy, tbh ), but a little feedback wouldn't hurt either. So considering that the admission in UMN goes at around 47% and that i'm not your run of the mill undergrad (and universities love diversity), how do you see it? do i have chances?

Thanks for taking the time to read this long text.
