Asian and nonspectacular EC's, possible?

I'm considering applying EA/ED to MIT, but I would like opinions on how much my EC's will affect me, and that fact that I'm asian. I'm posting some relevant stats:

SATI: 800M 710CR 700W (retake for 2300+, hopefully raising CR to near max)
SATII: taking Math2c, chem, and USH in october (expecting 800's in the first 2 and 750+ in USH)
GPA: UW: 3.99 W: ~4.4
Rank: 3-5 (B in hon. physics :-)
APs: Bio - 5, USH - 5, predict a 5 in Chem, Stats, Econ (hopefully both), and a 4 in Lang (predicted are from this past junior year)
Taking Calc BC, Lit, Gov, German, Phys B, and Compsci senior yr

ECs (here is where i get shut down):
Volunteering (200+ hours): Salvation Army- email system, file system, random stuff, Cleveland Clinic- help out, Relay for Life cocaptain- door-to-door fundraising
NHS: supervising events over the summer
Science Olympiad: local + regional awards (i really should've tried harder, team made states this yr)
AMC's: 9th grade: around 60, 10th grade: 106, 11th grade: 100.5, AIME: 2 (screwed up here, but not crying over spilt milk)
12th grade AMC's don't really matter do they?
Creative Communications Poetry contest

So yeah, despite a good academic record, none of my EC's stand out. I've chosen to volunteer my time instead of working, since my family earns a good income. I can say that entering 9th grade, I could not do algebra 1, so my math has developed over the years (but the culmination is a bit disappointing).

All I can say is that I will work my ass off in 12th grade, seeing as how my performance waned this crucial past year. Any comments would be appreciated.

EDIT I'm thinking of doing Econ/Math. Unfortunately, all i got for an Econ EC is an Econ Challenge t-shirt, since the teacher forgot to give me a permission slip (which was partially my fault).

EDIT2 I'm a male, sorry I'm not very good at this :P (i mean the admissions process, not the gender)

PSHHHHHHHHH - Hahaha, how about me getting a whopping 87 on the AMC this past year? Clearly, AMC scores are not incredibly important.

I would say that your objective stats are perfectly fine - you won't be working uphill against them, that's for sure. The main thing now is to write essays that reflect who you are - it's probably good to write at least a little about something not math/science related, so you can show them how multi-faceted or whatever you are. Good luck!

I don't know. Your numbers seem strong and compared to me your an EC all-star. For comparison my EC's consisted of three varsity sports, NO community service, and three years of NHS... that's it. I'm not sure how the admissions considers kids who do sports all the time so don't really have much time for other stuff but yeah, that's all I had and I got accepted.

I've always assumed my essay was a part of me getting into MIT (I was very proud of it). Mine wasn't about math/science too, it was about a history paper I wrote and how the research affected me.
