Bachelor's vs. Masters?

I am a recently graduated Psychology BA grad, but I was double majoring in engineering at the same time. I had a family crisis and needed to get out of school asap to take a year or two off and earn some money. Luckily, I was towards the end of my Psych degree and was able to graduate with just that rather than just stop college midway.

Now that I have my bachelors, I was wondering if post-bac or accelerated programs might be a better option for me? The LEAP program at BU sounds amazing; it takes humanities BAs and puts them through phases to get them masters degrees in various Engineering. How seriously are these kinds of programs taken by employers, though? I am taking some Calc/Chem courses at a county right now part time so I can keep moving forward, but would transferring to the Rutgers bachelor's program after getting an associate's at the county work out better? Would my future job prospects increase that way? I don't want to spend thousands of dollars on a masters degree if it is going to be a joke when I get out.

I was still in the process of deciding on my engineering concentration, so I am not sure that I can be very specific there.

ANY advice/help would be appreciated. Thanks in advance.
