Better chance of getting in with Declared Major?

So I am thinking of applying to a lot of schools that are difficult to get into, and I'm having a lot of trouble deciding which major/school to apply under. I DO have interests, but they are numerous and scattered all over the place. I don't have an outstanding SAT score or GPA (not extremely terrible) so is there a much better chance of me being accepted with a declared major, rather than being compared to all of the other students applying under Undeclared?

Except for those with applications that demonstrate that yes, they’re almost certainly majoring in what they’ve tentatively listed (at most schools, the major you list on your application is not taken as a declared major - you still have to declare one using whatever their process is once you actually enroll), most people are more or less undecided.

The point of listing a major on an application is so they can get an idea of what you might be interested in. It’s not a major declaration unless it says so. I would suggest giving them as much information as possible by picking one or more majors that you think you might be interested in studying, as saying you’re undecided doesn’t really give them any clue as to what you’re considering (few people are undecided as to every option).

Your choice of major is unlikely to play a strong role in your chances of acceptance unless (1) it requires a separate application, (2) the school for some ridiculous reason requires you to formally declare a major when applying, or (3) your application strongly supports your choice of major (e.g., you have a strong science background that is demonstrated by the information elsewhere in your application and you’re planning on majoring in a science).

Simply listing your interest in an uncommon major isn’t going to provide you an advantage without the interest elsewhere in the application to back it up.
