Better major/minor combination for PPE masters

I’m currently majoring in Political Science and minoring in both Economics and Philosophy & Law and am taking some additional statistics and maths courses. I also plan on getting a graduate certificate in Data Analysis.

If I drop my Philosophy & Law minor, I could double major in Political Science and Economics.

I want a PPE (Philosophy, Poltics, and Economics) master’s degree (with a focus in international studies focus) and a master’s desgree in Statistics.

Which would be better for applying to a PPE program: a double major in Political Science and Economics, or a major in Political Science with two minors in Economics and Philosophy & Law?

Neither one is better; they’re both fine. Both courses of study will give you the kind of prerequisite coursework you’d be expected to have in a PPE program.

I gave you advice in your other thread; since you give a little more information here - that you want an international studies focus - I strongly suggest, now, that you consider finding an MA in international studies. Most of those programs will allow you to take heavy coursework in political science and economics with a good amount of supplemental coursework in philosophy and law. There are lots of MA programs in IS at reputable universities in both the U.S. and Europe.
