So I was just sending my SAT scores to a couple of colleges. When I was going to send them to Carnegie Mellon it said that they require all your scores. Now, when I took the SAT for the first time, I only got a 1980, but the second time, I got a 2240. I don't really want the colleges to see that 1980, and sending it would only increase my superscore by 10 points, so there is really no use for it. Score choice is still allowing me to uncheck that score, but can the colleges that require them find out (if the scores aren't on my hs transcript) that I didn't send them all my scores? Would that look bad if they could somehow find out?

You can see a list of schools and each’s score choice in the website of colleboard. There are schools which ENCOURAGE you to send all scores, while some REQUIRE you to. If your school is in the latter case, I guess there is no other choice. It is common sense that students want to hide low scores, so the schools must have some ways to check.

The schools may or may not find out. But does it matter? Honesty is more important than scores. Some high school may list your test scores in the transcript. In that case, it would be stupid to lie. After all, most schools would only look at your best score or superscore. So the lower score attempt(s) would not hurt you while you need to pay extra for score choice.
