Can i include in my CV new extra-curricular activities that i'm doing later after applying ?

i want to apply for universities in December but can i include extra-curricular activities that i’m doing in February until May?
because my volunteer projects ends in may which is too long ??

Example:
Volunteer projects in the spring break helping …

Those are merely aspirational, they want past or current activities.
