I recently shadowed an orthopaedic surgeon during his office hours, and later that month I observed him in the operating room for 8.5 hours. Can I list this under my extracurricular activities on the common app? Or should I just keep this on my resume that I'll submit?

I would go for it,especially if your heading toward a medical field.

If you have no other extracurricular activities worthwhile, then definitely put it down (it is interesting.) However, if you have an activity with more commitment (e.g. running track for 4 years), definitely put that down. The activities section is meant to show that a student does more than just study - he/she spends a significant amount of time consistently pursuing activities and opportunities offered to him/her.
