Can I self-teach over a year and double major without risking my GPA for Law School?

I have around a year before I transfer to a UC. I’ve wanted to major in PoliSci and go to law school, but have also become interested in Economics. It’s also a really useful degree, and I think I’d be well-rounded with a double major in econ and poli sci.

The problem is, I do want to go to law school, and GPA is by far the most important aspect of all of this. I’m worried that double majoring in Econ could cause my GPA to potentially suffer, as a lot of the Stats/math classes I’ll have to take in college are some of the hardest courses in the schools.

Given that I have around a year where I’ll have a ton of free time, would spending this time self teaching myself the math and econ that I’ll later have to do be enough to stop worrying about dropping my GPA, or should I focus entirely on political science so that I don’t mess up my GPA for law school?
