GPA may be a slight problem for UCs, since they are so academics heavy. Vanderbilt and Northwester are also reaches. Your ECs seem pretty good though, but I’m not sure how much “immersion trips” are valued in the admissions process. If they are run by an institution and cost money to attend, they usually do not add much value unless they are highly selective. For everything besides the UCs, Vanderbilt, Northwestern, Umich, and Emory, you have pretty good chances. Good luck!
