All very prestigious universities that are reaches for everyone.
I say you have a strong GPA and ECs.
You will need a high ACT score and maybe some SAT IIs.
If you pull off a 35/36 on the ACT, you would be a solid applicant.

Just to add to this, you looks like an extremely competitive applicant. However, look into the Ivys because each one is pretty different and the chances of all 8 being the right fit are slim. Consider size/city vs rural (Dartmouth)/strength of different majors as well, not just the rankings

35/36 isn’t necessary but you do need a couple more points. Play down your families financial situation on your applicationd

As a hispanic student your admissions chances are improved. With a family income of $200K you don’t quite fit the profile of the underprivelaged, minority student. I don’t think there is a whole lot you need to “fix” it does seem like your academic rigor senior year is going to be much, much harder than up to that point. It’d be better if you were taking 2 or 3 AP’s next year instead of just one.

I wanted to, but the only other AP I would be able to take is AP English Lang/Comp, but I don’t have enough time to do the summer reading project that goes along with it

Get the ACT score up and try to get good scores on the SAT IIs. You are a definitely a competitive applicant but all these schools are very random at selecting so nothing is guaranteed.

I’d say very competitive based on race (pacific-islander) and your good GPA as of right now. Pacific-Islanders are about as rare as Native Americans and I think they get more of a boost than African American and Hispanics during admissions.
ACT definitely shoot for as high as possible. Take the PSAT (for National Merit) and SAT (which I think is required if you get national merit semi-finalist) and if you do well on those (2200+ on SAT), I’d say if you continue do what you’re doing, write good essays, you’ll be a very strong candidate for all the schools mentioned.
