I want to get into BC, NYU, and Vanderbilt and U. Chicago

NYU is highly likely to admit you. BC & Vanderbilt like ED/EA apps. Chicago also likes EA applications, but values teacher/professor recs even more, in my opinion. You are competitive for all of your listed schools. Boston College may prefer more community service; Chicago's application essays play a significant part in the admissions decision; Vandy loves ED/EA apps; NYU loves full tuition paying students. Your GPA & SAT I of 1380/1600 are well within the mid-50% range for all schools.
This is an interesting and somewhat unusual mixture of schools as BC & Vandy are quite different than NYU, and Chicago is more akin to Yale & Swarthmore.

Thanks!!

How many hours of community service would make me stand out to BC?

Quality is just as important as quantity. Catholics & Jesuits are givers; they like to help those in need.

Chicago may be tough, considering their selectivity but I think you have a good shot at Vandy, BC, and NYU. Do you live in the South? If so, you may even have a better chance at Vanderbilt.

Yeah, I live in Texas.

Forgot to mention my job: babysitting 2-3 hours/day
