In general-You sound like a pretty strong applicant, but the 3.0 unweighted GPA will hold you back some. Your ECs are not incredible, but they're pretty good. You've obviously taken the most challenging courses at your school, so that's a definite benefit. That 750 CR is a benefit for you. Also, what's your class rank? Are you in the top 25% of your class, because being in that group will be relatively important to your app. Overall, I'm afraid colleges might perceive you as not working up to your academic potential, but you can help reverse that perception with your essays and teacher recs. Also, of course, URM status doesn't hurt.

Fordham-This may be a low reach for you, again due to GPA, but I think it's a match. You've got above average SATs for Fordham, and good ECs, so probably about 30-40% chances. Could improve with very strong essays and teacher recs.

NYU-This is the hardest to get into on the list; a definite reach, but with very strong essays you have a shot. You'll be below the average GPA for their applicant pool, but it could be a possibility. I'd encourage you to do ED if you really want to go here.

University of San Diego-Again, above average SATs, below average GPA. However, you're around the top of the applicant pool outside of GPA so I think you've got a good chance.

Pepperdine-Probably a little harder to get into than Fordham or USD. Still easier than NYU. 20ish percent chances.

As far as your list, I would add a couple more matches and safeties, especially high matches; if you pick schools that you can demonstrate a lot of interest in and write awesome essays, I bet you could get into quite a few schools like Fordham and USD, but because you're kind of a unique applicant (ECs, stronger SATs than GPA) I suspect that you might see as many rejections as acceptances, unfortunately.

Hope I wasn't too much of a downer, and it's just my opinion. Best of luck!
