What are my chances?

Raise the SAT, which is pretty low for Stern’s standards. The SAT II scores are also kind of low. However, based on a GPA, your unweighted is also kind of low for Stern’s standards (3.75 UW). In addition, you only took one AP class in your Junior year? (Assuming that is why you have only 1 AP score at the moment). If you also took some of the more difficult classes in your school, then that would “up” your application, perhaps. If I were to give you a chance, it would be a maybe, leaning towards a “no”. That’s my two cents.

I wanted to apply to Stern

GPA is a bit low for Stern, and the SAT even more so. Focus on improving those, obviously the latter is far easier to fix now.
