Well I am currently a sophomore in high school entering Junior year. My current stats are a 3.3 GPA and possible chance of a 2100 on the SAT (previous practice tests). Would I have to improve in any of those stats? Also what other things do MIT look at for example extracurriculars?

You should try to improve your GPA to roughly the 3.6-4.0 range. A 3.3 won’t automatically reject you, but it’ll place you at a slight disadvantage.

Also, MIT doesn’t just accept the random student with a 2400 SAT and 4.0 GPA. You need to demonstrate your interest in whatever field you like, whether it be medicine, engineering, math, business, etc. This means, find an internship or research opportunity, join EC’s that you enjoy, volunteer at the local hospital, try participating in a math competition, whatever it is. A 2400/4.0 student with virtually nothing else on the application will certainly get rejected.
