I canā€™t get over 5+ cups of confectioners sugar for 12 cookies. That seems like a lot, but Iā€™m sure theyā€™re wonderful.

I used the entire 5 1/2 cups but I had a lot of icing left over.

I was inspired by your posting with this recipeā€“it was the maple glaze that hooked me. Made them and decorated them just like the picture! So good! I think it will be on the regular holiday cookie rotation. Thanks!

Iā€™m doing an annual Christmas cookie baking day with a friend on Saturday. We will have 8 different kinds of cookies in total. We are making peppermint blossoms, Russian tea cakes, chocolate crinkles, ginger crinkles, chocolate truffles, peanut butter crunch balls, and a cookie with dried cherries and pistachios. We think itā€™s going to be a very colorful and varied tasting presentation!

Is a peanut butter crunch ball along the lines of a buckeye? Round ball, unbaked, pb mixture on the inside and dipped in chocolate

Very similar to a buckeye but also has Rice Krispies in the PB mixture. Itā€™s PB, butter (you actually heat up the PB and butter), XXX sugar, and Rice Krispies. Shape into 1 inch balls. Refrigerate until firm. Dip in melted chocolate chips and sprinkle with rainbow sprinkles or chocolate sprinkles.

Very tasty. A little crunchier than buckeyes.

Mom always made her buckeyes that way with Rice Krispies - I actually prefer it that way!

Not a ā€œcookieā€ but a Christmas toffeeā€¦Iā€™ve done the original Christmas Crack with saltine crackers (addicting) but Iā€™m liking the look of this toffee and it reminds me of a Heath bar, a family favorite candy.

Has anyone made toffee/Heath? Does this recipe look accurate in ingredients/directions? Itā€™s very simple - so Iā€™m wondering if itā€™s too simple! Have to check at home to see if I have a candy thermometerā€¦

My mom made toffee like that when we were growing up. It is delicious as are Buckeye Balls.

I THINK I have one but thereā€™s a chance it could be a meat thermometer - obviously I donā€™t use it much!!! :wink: Appreciate the thumbs up that itā€™s a decent recipe.

@FallGirl I do buckeyes SOME years. Only because we Ohioans like PB, not because of that univ in Central Ohio. :wink:

So that must be why my H (who grow up in Ohio) is such a fan of buckeyes! They are always part of his cookie repertoire. My kids (native New Englanders) love them. In fact, weā€™re going to spend the Christmas holidays with my older D and her family (who live in Indiana) and sheā€™s already asked H to make buckeyes!!

For those that want to experience a Buckeye but not make them - or you might want to send some as a treat, these local (not only to Ohio but to my Ohio area) are pretty decent. Looks like they are also stocked at Cracker Barrels across the country.

Iā€™d way rather have a brownie than an iced sugar cookie! Not a fan of iced cookies. My favorite cookie is oatmeal chocolate chip with pecans and a sprinkling of sea salt, but I donā€™t know that itā€™s a Holiday Cookie. I just canā€™t do super sweet stuff any more and if Iā€™m doing sweet it better be chocolate! (Hence, preferring the brownie over the sugar cookie.)

Homemade cookies are not sweet at all, not sickly sweet. The last batch of cookies I made are nearly gone. Today I will make another batch, most likely ginger cookies, they were so good last year, and lemon squares, are they Christmas cookies or not, I have lots of lemons right now.

Weā€™ve often said, ā€œif we like this type of cookie so much why do we not bake it at other times besides Christmas?!ā€ - of course there is no reason not to, but it often just doesnā€™t happen!
