Easter dinner for tonight-spiral ham, scalloped potatoes, glazed carrots, and a morello cherry tart for dessert . I love the cherries from Trader Joe’s . Unfortunately, since it’s only the two of us, we 'll be eating ham for awhile! I did see that the ham we got freezes well though. I have never frozen ham slices before but may try that this year.
My daughter put on her Instagram stories that they made homemade pierogi last night. So I made an extra big serving of mashed potatoes, I put cheese and bacon. I’m finishing them off in the oven in a casserole dish. So twice baked potato casserole today, pierogi tomorrow.
It’s Easter but wanted to use what we have, so just baked chicken and some vegetables.
Ham freezes really well. Part of our dinner tonight is going to be ham that I froze in January. After Christmas, Costco always has fantastic deals on the unsold spiral sliced hams and I pick up one or two (each ham was some ridiculously low amount after the Costco sale - something like $10 a ham or around $1 a pound.) Since we’re not huge eaters and when oldest isn’t home from college there are only three of us, I portion each of the hams into 1-2 pound portions and freeze those portions individually. Easy to pull out one portion through the year when we want ham.
Oldest son loves crepes, so this morning I thawed out a portion of the frozen ham and we’re having that plus Swiss cheese and an egg inside crepes. Add a salad on the side and maybe we’ll feel like we’re in France. Anyways, yes, ham freezes well.
Wish I’d gotten some of those Morello cherries, that tart sounds delicious. I can never decide if cherries or mangoes are my favorite fruit.
@milee30 Thanks so much for the ham info. I have made the rustic cherry tart a couple of times but have substituted a refrigerated pie crust and it was still tasty. Probably better with the pie crust recipe but I’ll never know!
Any cherry pie/tart/galette is a good dessert.

Got a bag of baby tatsoi from the CSA this afternoon. I’ve never had tatsoi before, but I thought I might stir fry it with green garlic & pork, then serve it with glass noodles.
Does that sound like a combination that will work?
That tatsoi plan sounds good. I love tatsoi; it’s mild and tasty. Tatsoi cooks quickly, so I’d add it to the stirfry late.
I just bought a roast—it’s an unusual purchase for me but it seemed like we haven’t had beef in ages and it was on sale. I had to look up recipes for it since we so rarely have it. I’m hoping it turns out.
It’s a Paula Deen recipe—bake 375 for 1 hour, turn oven off & have it sit for 3 hours. Bake again for 30-45 minutes. Let it rest 20 minutes, slice & serve. Keeping my fingers crossed.
Am baking potatoes in toaster oven, since you’re not supposed to open oven once you start the roast.
The market was nice and fairly uncrowded this morning, so was able to socially distance easily. It was the 1st time I’ve been to the market in many weeks—the kids have been doing our shopping.
Wanted to try baking bread but market had NO yeast. but had most of the other things we wanted.
Yay, the roast turned out delicious and just the right amount of rare/done. It was a perfect Easter dinner!
If you don’t want to be hounded by the food pantry for future donations you may wish to simply mail them a check and not provide your phone or email. That’s what we opted to do. They can leverage cash much better than most buyers, as they have buying power.
We are fortunate to be able to contribute and continue to live pretty comfortable lives while >1/4 of our state is now unemloyed.
Thank heavens for my little rice cooker. I have lots of rice but am running out of a lot of things. Eating rice, frozen veggies then for protein beans, tuna or eggs. That’s it. I have so many food allergies that make this tough. Can’t eat dairy, nuts, gluten, salmon, citrus. Rice is safe and makes a base for every meal at this point.

Meatless Monday! Tonight, this favorite so satisfying dish (minus the prosciutto) We have leftover soft pita from Easter and will pair a kale salad with it.

Youngest son - loves to cook/bake - was very concerned when he learned about the Smithfield pork processing plant shut down. We don’t eat huge amounts of pork and rarely eat a piece of bacon on its own, but he uses a piece of bacon as an ingredient for other dishes fairly often. Since it’s easy enough to freeze, I went to Costco this morning to buy groceries and made sure to get a big package of bacon. That should last us for a year or so. I’m guessing DS wasn’t the only one worried about the potential pork/bacon shortage since the pork areas were a little more bare than normal and I saw a lot of people with it in their cart.
We did homemade Chipotle style bowls tonight. We all love Chipotle, but the closest one here is across from the major hospital (where they’re treating most of the county C19 patients) and is always an overwhelmed disaster anyway, so we’re not going there for the foreseeable future. Anyway, it all turned out well except for the rice, which was too sticky (guess I didn’t rinse well enough.) But the barbacoa, pintos and corn salsa were good.
