Cooking when you’re Staying home

Tonight DS’s fiancé combined a bunch of leftovers into a delicious soup. Minestrone, crab, couscous, kimchi, and maybe another thing or two. Unique, and very tasty.

I was lazy last night and just threw a bunch of frozen jalapeño poppers in the oven.

I think tonight I’ll be making linguini with clam sauce and a salad.

My favorite cook-at-home, “junk” meal (besides nachos MAYBE those are a little healthier) is loaded fries.

Make home fries or use a good crisp crinkle cut -or whatever style you like frozen fry.

Chop up some veggies finely like jalapenos, those small sweet peppers, onion, tomatoes. Herbs like parsley, cilantro or chives. Cheese like feta, crumbly queso fresco, or sharp cheddar. Olives. You could do some diced bacon or chicken if you want another protein/meat.

Take the hot fries out of the oven and top immediately with cheese and then the veggies and herbs. A little ketchup or ranch on the side for dipping.

Messy but really delicious! The more toppings you have the less fries you’ll need because the toppings will be what fills you up!

Either had i. But when I did my initial big shopping, way back when, I threw a bunch of frozen crap in my cart. I normally never buy frozen stuff like that.

DH dug into freezer for peas and used leftover ham and ham bone to make Ina Gartner’s pea soup. We like it better. It tastes so fresh. Had that with some other leftovers. Tonight using peppers before they go bad for stuffed peppers.

Taco Tuesday here tonight. Carne asada for my H and D and I will have some fish that we can also grill. We do cabbage, radishes, jalapenos, spicy jack cheese, salsa and Mexican corn form Trader Joe’s as filling. D and I like the mini flour tortillas for our tacos and H likes to make his into a burrito. D will also make us spicy margaritas to go with dinner.

I’ll be happy when Passover is over.

Making beef veggie soup with ribs from rib eye roast. Should be yummy.

Today is DH’s birthday. I picked some flowers from the backyard to make a small arrangement for the table. We’ll watch the sun set with ice cold martinis and an appetizer of small sourdough slices slathered with warm roasted garlic and fresh pesto from garden basil. For dinner, a sous vide sea bass on a bed of steamed spinach, grilled asparagus, and fresh lemon tart made from our lemon tree.

We celebrate each of our birthday’s like this, so no different this year, but we look forward to planning and preparing a meal that the BD person chooses.

Hubby’s birthday is Thursday, but since he is still working nonstop I won’t be doing anything special. As soon as it lets up enough where we’ll be able to have real dinner together, I’m going to order from one of our favorite restaurants. We usually celebrate with a dinner out but always on a weekend night, even if b’day falls on a weekday.

We only do gifts on milestones, so last year was a surprise trip to Iceland. But, the actual milestone b’day was the previous year. Work stuff and with 4 family weddings that year there was just no good time to go.

I don’t have a real card but I’ll send him an online one.

I’m impressed at what inventive and talented cooks/recipes are on this thread.

Tonight is a simple but good recipe. Salsa chicken

Chicken breasts split sideways (about 3 breasts)
1 packet Taco seasoning
1 jar salsa
Shredded cheddar cheese.

1.Coat chicken with taco seasoning on both sides. Put in backing pan.
2.Top completely with salsa.
3. Bake at 350 for 50 minutes
4. Top with a cheddar cheese (we like a lot)
5. Bake an additional 10 minutes.

We serve with brown rice and any vegetable.

There’s a local fish market that’s offering online orders and drive-up. H ordered fish to pickup tomorrow, including 3 lobsters. He plans to steam the lobsters and I’m making coleslaw. My D wants to make french fries from scratch. H and I have never made them from scratch. Does anyone have a recipe? We have Yukon Gold potatoes and baking potatoes.

My kids and spouse have been making various breads since March. Not good for the diet but reminds me of before kids when he used to make bread all the time. The kids love making bread. They have also moved on to making bagels. On Easter morning, they even colored then with food coloring. Delicious but fattening.

The way we do our “home fries”…
I like to leave the skins on but you can peel if you like. I cut the potatoes to resemble steak fries - so cut a potato in half lengthwise and then cut that half in half and then each of those 2 pieces in half - so maybe on a medium sized potato you end up with 8 wedges.

I then put some olive oil in a bowl - enough so that you can add the potatoes and toss them to coat. (you could also do this right on your baking pan). Transfer to a baking sheet that is very lightly coated with a baking spray. Sprinkle wedges with coarse salt and if you like pepper or garlic salt or whatever. Bake at 400 probably for a good half hour until they are sizzling and brown!

I prefer baking over frying - largely because I hate the mess of frying! But the baked version can still get crispy!

Sometimes we do slices instead of wedges so they get sort of chip like.

Dinner tonight was kind of appetizer-y - buffalo cauliflower and Asian lettuce wraps.

We ate our Easter ham Sunday and Monday night and finished the scalloped potatoes . Ham and Swiss cheese sandwiches for lunch Monday and Tuesday. So, froze the rest of the ham in packets this afternoon. The spiral ham was delicious but I’m hammed out for awhile!

We lost power for over 3 hours yesterday because of strong winds. Made me realize I want to keep less in the freezer to guard against possible loss. I usually don’t start thinking more about that until hurricane season .

We had some salad stuff that we wanted to use up before I go to the store again (only going about every 8-10 days). So, to start using up some frozen stuff, I preheated the oven for a Rao’s lasagna. While preheating the oven, I noticed the oven coil started to spark so turned off the oven immediately. Bad timing to have a very old stove have problems, as we cook and eat most of our meals at home . Oh well. Cooked the lasagna in the microwave instead and it was very good. But, we normally eat a lot of fresh stuff and use the oven alot. Not sure though that I want to deal with oven repair or replacement right now. I might have to think about more stovetop, crockpot, or gas grill options for awhile!

We ordered 1/2 flat of strawberries and 2 lbs of mushrooms from some local farmer’s market vendors who are delivering. Let me just say that 2 lbs of mushrooms is a lot of mushrooms! They were 1/2 shiitake and 1/2 chestnut mushrooms. I hadn’t had chestnut mushrooms before and they were delicious.

I made a big pot mushroom barley soup/stew and didn’t even have to work much to make it taste great. Still have half the mushrooms left, lol.

Also made a strawberry galette and have lots left there too. Sacrificed 2 sticks of butter for the crust.

It’s weird feeling like you have too much of some type of food and still wondering where your next egg will come from.

Chili tonight.

I was hoping it would last me for 2 nights. However, I asked Son not to eat the 2 frozen pizzas we have, as I wanted to use those Saturday night. He said sure, he’ll just eat the Chili for lunch the next few days…argh! What’s wrong with a peanut butter or turkey sandwich? I haven’t the heart to say no.

I’ve counted my meals. I only have enough through next Saturday. That means I need to go next week, I don’t want to wait until we have nothing. I think I’ll go Wednesday during senior hour at Kroger. It makes me nervous. But I plan on stocking up for another 3 weeks, so I don’t want to send him. Need to start planning my meals. I’m going to look over this thread to see what others made to help out. Plus, get more crockpot meal ingredients.

For someone who has always been a cook-grumbler, I haven’t really minded doing this during stay at home. It’s been like a challenge, which I’ve enjoyed. Thank goodness.
