Cooking when you’re Staying home

@showmom858, sounds delicious. I’m jealous of eating on the patio

Haven’t made cookies since Christmas so today it’s Toll House chocolate chip! It’s that kind of day.

@Singersmom07 , funny you posted that! I made my ultimate chocolate chip cookies today, also. (Name of recipe, not my actual baking ability).

Instant Pot used weekly for hard boiled eggs, steel cut oatmeal & rice.

Bought its air fryer lid, but have only used it twice. (One fail, one success.)

Pulled out the really old bread machine and made a couple loaves of a buttermilk bread that is comfort food for my family. Have a mostly full “bread machine” yeast jar in the fridge that seems to do the job.

Medium rare? Sorry, I just hope we haven’t resorted to cannibalism yet.

My dinner is a half bagel, cream cheese, lox, onion, and a Bloody Mary. Can you tell it’s a Friday nite and I’m exhausted?

@bookworm that sounds like a really classy breakfast-for-dinner! Enjoy!

I’ve mentioned elsewhere that DS and his fiance are sheltering in place with us. Every morning I make what we all call “sexy smoothies”. Where many smoothies go wrong is when people add ice. Big mistake! Just put equal parts juice and yogurt in a blender, add a handful of frozen berries, and blend. Very smooth. And very sexy.

Oohhh. I am so going to try this. Thanks for sharing! I usually grill the rack on very low heat and then cut it up into individual ribs. So tasty.

IKEA releases their secret meatball recipe!

Of course, all Swedes I know knew this recipe all along.

If you’re going to try this, take the extra steps of pounding them with a meat mallet and then trimming most of the excess fat before grilling. You’ll be glad you did.<<<<<<

I buy the racks of lamb from Costco and I have no idea what you are saying? The little vacuum packs of maybe 6/7 tiny chops on a rack? What are you pounding? what fat? They are pretty lean, though I never would separate them to cook. The NZ lamb?

When the Ikea Swedish meatball recipe came out, I was surprised to see no nutmeg. I’ve never had Ikea’s meatballs but associate Swedish meatballs with nutmeg. And allspice, too.

@sherpa We make smoothies with oatmilk, spinach, fresh berries and pineapple, chia seeds and protein powder.

This is in my slow cooker right now:

Chile Chicken Verde

1 ½ pounds boneless, skinless chicken breasts
1 ½ cups bottled salsa verde
½ medium onion, chopped
1 bay leaf
½ tsp. pepper
1 tsp. ground cumin
1 tsp. minced garlic
1 to 2 Tablespoons jarred, sliced jalapeños
2 tsp. chicken bouillon granules
1 can white beans

Just plunk the chicken breasts into your slow cooker and throw the salsa verde, onion, bay leaf, pepper, cumin, garlic, jalapeños and bouillon on top. Cover, set to low and let it cook for 9-10 hours. Add beans during the last half hour. When the time’s up, take a fork and shred the chicken right there in the pot, which will now be very easy to do.

@FallGirl , thanks for the recipe. I’m going to write it out and try next time I go grocery shopping. I’ve never made anything with Salsa verde. I have a really good one for a crockpot tortilla soup I’ll put up when I make in soon.

Tonight is a spaghetti and meatballs again. I froze a bunch the last time I made it. Garlic bread and a salad.

Today I am making a loaf of GF brioche for the first time. This way my DIL can have French toast with the rest of us for Sunday’s breakfast for dinner! I have a couple of really close friends who are GF so one of the silver linings of this is the time to experiment.

Dinner tonight will be grass fed strip steak with garlic potatoes and roasted cauliflower for my D and me and leftover squash ravioli in a brown butter and white wine sauce from last night. Most days I’m loving this time to cook - when I’m not in the mood we do takeout!

@FallGirl: I make a similar recipe in the IP substituting a variety of mushrooms for the chicken (we’re mostly pescatarian). It’s delicious and a favorite, served over brown rice.

It’s been relatively quiet for H today, so took out a steak which he will throw on the grill. I’ll do baked potatoes and a salad to go with it.

Fingers crossed there is enough propane in the grill’s tank.

Just got back from the store- first time in 8 days. So, salmon on the grill tonight, salad. H likes to grill on the weekends. Tomorrow, pork chops on the grill ( with one of the rubs I got him for Christmas).

Allspice is apparently optional and might have been lost in translation:

[Kudos to all who measure broth in deciliters. ]
