Thanks for the inspiration. I had some hot smoked salmon in the fridge so had it with cream cheese, thinly sliced onion and cucumbers, whipped cream cheese and capers on two slices of toasted Ezekiel bread. Super easy and yummy. Got to put more smoked salmon in my grocery order.
We marinated pork chops all day then grilled them. We also had grilled eggplant. I had planned to make roasted red potatoes but noticed I had some russet potatoes that were looking like they were almost beyond their prime so I made mashed instead. I was lamenting the fact that we didn’t have applesauce (my kids like it with pork chops) when I remembered I had a bunch of applesauce cups in the garage. My son likes them in his lunch for school,and I’d forgotten all about them. He obviously isn’t going to school anytime soon. He opened a bunch of them and made cinnamon applesauce.
Tomorrow I’m making pumpkin chocolate chip bread to send to my daughter. She turns 21 a week from Monday and doesn’t get to have the fun birthday with friends she’d been looking forward to. The bread is an old Ghirardelli recipe. Of course I realized after I decided to make it that I didn’t have any pumpkin. I didn’t want to go to the store for that one thing, but fortunately my neighbor had a couple of cans and saved the day! I need to get it in the mail by Monday to ensure it arrives in time.
We love applesauce with pork and it is another thing I make in the instapot, Easy and quick and no sugar added. I like to use mixed apples from our farmers market basket which makes a unique flavor each time.
The other issue with no underlying conditions: For those of us who think we are fine, who really knows. It just might not be diagnosed yet. Years ago, elementary PE teacher H stopped testing the mile. He had so many kids with asthma, obesity, and other issues. One day he had a kid that had to be taken away by ambulance because he had an asthma attack. But, he was not a diagnosed asthmatic. That was his first episode. You’re always healthy - until you’re not. Nobody is really immune to that.
I bought some yellowtail steaks and seared them last night with a dressing I made of olive oil, lemon, fresh garlic, honey and salt and pepper. I sliced the yellowtail and served it over arugula, red onion, radishes, avocado and a bit of shaved parmesan cheese. We also opened a nice bottle of rose. It was a delicious dinner after our 5 mile walk!
Last night it was leftovers of leftovers - I had some ground lamb left from Friday night lamb burgers, I wokked it with onion, garlic, celery, broccoli, ginger and hoisin - removed it from the wok, scrambled a few eggs, tossed in leftover rice from who knows when, added back the lamb concoction and topped it with a fried egg, add a side of salad, and that was dinner!
A really delicious and filling and so quick and easy dish is a doctored up ramen. I use this “recipe” but also add in some extra veggies when boiling the water for the ramen - cabbage, carrots, onion, snap peas, kale - whatever I have on hand. The addition of the egg and some type of cheese (I often will add a very thin slice of cheddar since I don’t often have American) - it’s very yummy served in a wide shallow bowl.
@abasket Going to try your dan-dan noodle recipe tomorrow. We have been going to a Chinese restaurant since we moved to MA 35 years ago. The Dan-dan noodles there are the best. I never had them before and keep trying to find recipes that are like the ones at this restaurant.
@Bromfield2 the one comment I would have about the dish is that I would work to make the chicken get a little more carmelized with the spicy hoisin mixture and I would have liked the “broth” to be a little thicker - it was very flavorful but thin.
