Cooking when you’re Staying home

Don’t know what we’re having tonight. DH’s GERD is acting up, so he’ll be in charge of menu planning for a while. That will mean bland for me or having to do add-ins and my own sides. :frowning:

Grilled the very expensive steaks I got at Costco last weekend (duh, that was the only beef they had). OMG… better than at a chichi steakhouse!! I am afraid I”ve developed expensive tastes… :wink: The good news it was still only about $15 for the two of us to indulge. Served with rainbow cauliflower mix from TJ (frozen and cooked) and horseradish sauce.

@BunsenBurner - I think H bought those same expensive steaks! But they were wonderful.

Okay, now I don’t feel bad - I ordered expensive steaks that should hopefully be arriving on Friday. Our Costco doesn’t carry that kind of meat! It seems a lot of companies that normally supply restaurants are offering some really good deals though.

S and DIL coming over tonight for a SD dinner and walk with their dog.

I have no-knead bread in the process and will make this Easy Greek Sheet Pan Chicken - with a few modifications on the side for picky H.

@sabaray - yes, there are amazing deals on things not normally sold directly to the public. A local fisherman returned with a boatload of sashimi grade tuna… only no one was there to buy it. So it was sold to the public dirt cheap.

Crunchy pan-fried cod, shredded cabbage, pickled red onions, sliced mango, green salsa, a dollop of guacamole and a drizzle of ranch dressing in a flour tortilla. I could live off of these things.

@DeeCee36 im going to try the Korean beef bowl tonight with my ground turkey. I’ll serve it over cauliflower rice with some vegetables.

I have a surfeit of sorrel in my herb garden. So, I made a sorrel soup (Shav) using a Russian recipe from my son-in-law’s mother. H made a green salad to go with the soup. I still have more sorrel so I’m going to try Julia Child’s version from Mastering the Art of French Cooking–Potage d’Oseille. I’m going to make an extra quart for a friend who is going through therapy for a rare form of throat cancer.

I like reading about all the different meals and recipes people are trying. Hopefully it will break me out of my rut.

If my steaks actually arrive, I am going to try cooking them with my sous vide. I bought one several months ago and have yet to try it out. Anyone have any tips?

@sabaray, I’ve never used sous vide for steak, only for fish and it was tender and delicious. Today I’m making BBQ ribs (TJ’s had beautiful racks of baby back ribs yesterday), French potato salad (mustard/vinegar/oil rather than mayo-based dressing) and a kale/cabbage slaw. It feels like summer here so we’re taking advantage!

Today is my birthday so my husband asked what I wanted - he cant really eat shrimp anymore so I only make it when he’s out of town. Obviously he hasn’t been traveling so it has been a while, and I love shrimp! So he’s making homemade linguini, as well as a macadamia pesto sauce with shrimp. He also made a loaf of sourdough bread this morning. I’m not sure what we are having for dessert-I had wanted to get something from a local restaurant that has its own bakery, but just noticed they aren’t currently selling bakery items. We may just have brownie sundaes. My parents usually come over when we celebrate birthdays but they obviously can’t today but they are going to Zoom with us over dessert. My mom happened to have made a bundt cake by coincidence, so they will eat dessert while zooming with us.

@sabaray I use sous vide for steaks all the time. I vacuum seal the steak after seasoning with salt and pepper, then sous vide at at 133 degrees for 2 hrs and 30 mins (for a 1.5" steak). I then sear the steak on a blazing hot grill just to get the sear. Steaks come out great 100% of the time.

Thanks for the birthday wishes! Dh informed me a little while ago he has to do some solid work on a proposal due Friday and would I mind if we didn’t have homemade pasta? He will still make the pesto with shrimp and I’m totally ok with boxed pasta!

However, fun surprise! Some of you may have seen on other threads that my oldest has been working at a bakery in CA. It’s part of a national franchise (Nothing Bundt Cakes) we had never heard of here in MD, even tho there are a few in the DC area. We have been amazed at how busy and popular her work has been, like ridiculously busy. What the heck is it about these cakes, we wonder? Well yesterday, dh told me that he had ordered a gift for me but had it delivered to my parents’ house and he was going over to get it. In reality, he drove an hour to the closest franchise and bought a dozen of their mini-cakes. He stopped at my parents to drop some off for them, and that’s what we all will be having for dessert when we Zoom later. Ironically my daughter will be at work tonight, so she wont be able to eat one of her own bakery cakes with us. Hopefully they are as good as they seem to be!

Yesterday was my youngest son’s birthday and we went up to my parent’s and ate with them. Nothing fancy, just ham and macaroni and cheese. My mother also made him a red velvet cake which he says is his favorite.

I decided to make homemade ice-cream Sunday afternoon after someone mentioned it, of course the kids were gone for the weekend so most of it wound up being put into containers in the freezer. I also picked up subway since it was just me.

I’m still trying to decide on tonight, we have ground chuck or boneless chicken breasts in the fridge. It’s too late to marinate the chicken for teriyaki chicken, I could do chicken sandwiches with chicken cooked with bacon and bbq sauce on it. Honey chicken takes longer than I want to spend right now. My daughter is always up for tacos but I’m not, considered hamburger steak but she doesn’t like that. That would leave spaghetti and meatballs or grilled burgers. I better decide soon.
