@4kids4us - we live in San Diego and Nothing Bundt Cakes has been around for a long time. We have had them for many birthdays and desserts over the years. I hope you like them.

We had chili tonight. We usually make it with ground turkey, but I suggested we save the turkey for a different meal. Didn’t miss the meat at all.

@4kids4us Nothing Bundt Cakes just opened near us right before our SAH went into effect. We’ve been dying to try it since the cakes on their website look wonderful. Please let us know how they are.

@4kids4us Happy birthday! We have stores by us and love those cakes. Btw we have the same shrimp issue with H in our house – the kids and I always make it when he’s traveling. I hadn’t even thought of making shrimp for months, but now I will. In any case, I hope you enjoy the festivities!

I made Korean pork (made in the instant pot) over rice, with Asian slaw tonight.

DD’s turn to make dinner tonight. Took the big bag of spinach from farmers box and used half to make a pesto. Then made pasta in the instapot. Used the pesto, some cheese growing old in frig, the rest of the spinach and some of the frozen cooked shrimp all stirred together. Yum!

I sous vide tenderloin steaks often. For medium rare, it’s only an hour for 134 degrees at 1-½" thick, but use your sous vide instructions. I’ve found that it’s important to season the meat well and add herbs when you vacuum seal. More importantly, once it comes out of the sous vide, blot the meat dry with paper towels as much as possible - really dry them out before searing on the grill or in a pan, otherwise, the meat will be too moist and not brown. Sous vide beef is juicy and succulent - it’s the best use of the technique, IMO.

Happy B-Day @4kids4us ! One of those stores opened here not long ago. I had it once and it was very good. I hear from our department chair (whose bday was today also!) that they make a fantastic pineapple upside down bundt!

@4kids4us Enjoy! NBC’s are terrific! I love getting the mini (Bundtini’s) ones for parties…and the Bundlets are fun hostess gifts. My Faves are Red Velvet, Carrot and white chocolate raspberry…yum!

I’d like some ideas for what to eat for snacks. I eat some vegetables each day but lately, I’m still hungry. I’ve given in and recently binged on cookies. I don’t want to have lots of sugar everyday though.

Did the online courses have tests and if yes, were they timed?

Nuts of many kinds, cheese, deli meat or leftover chicken or steak in a lettuce wrap, chick peas, veggies and hummus, boiled eggs are some items I’ll snack on. I find items with protein help me keep from craving foods with a lot of sugar/carbs and keep me fuller.

No times tests. Homework assignments for each week given on Mondays and due on Sunday.

The AP test was timed and she had no problems with it. Evidently, many others did.

My quarantine snacks:
Turkey roll up - slice of turkey with cheese and pickles
Dates w/peanut butter
A piece of good, sharp cheese - manchengo is my current fav
Fruit w/plain yogurt, sliced almonds and a splash of maple syrup
Avocado toast - 1/2 slice of toasted bread, mashed avocado, sea salt and pepper or everything seasoning

Last week I ordered a dozen mini Bundt cakes from a store in Sunnyvale. Many years ago I found them and sent them for son’s BD, for his workplace.

This time, they are just for him and his wife. DIL is arranging a virtual graduation party next week. I pad extra for the grad school decorations. I’ve never tasted them, so I’ll await your opinion.

Post 1007 the recipe for Korean beef bowl was delicious and super easy. I used ground turkey and cut back on the brown sugar, used coconut aminos in place of soy sauce. Served it over cauliflower rice that I added grated carrot, celery and yellow pepper. I had radish slices and cucumber for toppings along with roasted broccolini. It was fast and easy. I would make it again.
Tonight will be vegetarian. Mexican bowls with beans and lots of guacamole.

Back to report on the bundt cakes. A little back story, my daughter wanted to make me a cake, but we would have had way too much leftover and I had told myself that starting today, I needed to cut back on carbs, etc and stop this COVID-diet. I knew I’d be too tempted if there was any leftover homemade cake, so wanted a dessert that would only last one night!

Dh bought the bundtinis which are bite-size, so we got to try several flavors. My daughter told him that white chocolate raspberry is the most popular but she thought I’d also like the strawberries and cream (he got a dozen, we each tried two flavors). Both were delicious, but the white choc raspberry was definitely my favorite. The carrot cake was a hit with my daughter and husband. The red velvet was considered okay, but not a favorite. I think those were all the flavors we had.

The bundtinis were a good size, perfect for being able to sample flavors.

They were definitely delicious. I cant recall who mentioned they live in San Diego, but my daughter works in one of those locations. She started there just weeks before the coronavirus hit. Once the “stay at home” went into effect, they were slammed with business! It has been so crazy, they have barely been able to keep up with orders. She was working like a dog, in addition to having to keep up with her full college course load. Now I have a sense of why they have been so busy - definitely a satisfying comfort food!
