Cooking when you’re Staying home

doing another one-pot pasta tonight - this time with vegetable stock, diced tomatoes, onions, garlic and basil. Serving with a side of sauteed zucchini.

Tonight will be ground turkey tacos with avocado, salsa, and shredded cabbage. Leftover corn will get a quick grill and we’ll also have a crustless spinach pie that my best friend just dropped off in exchange for 5 1-lb bars of TJ dark chocolate!

I just picked up my order from village market and I ordered their veggie quiche, so that will be dinner tonight with a salad.

Stocked up on fresh fruit, produce, deli and their delicious rye bread. I’ve got a big order of pantry items in at Walmart for pickup on Sunday. So set for a few weeks.

I’m losing it–hit post comment (#1063) before I finished. Wanted to add that I’ve been using Samin Nosrat’s shallot dressing recipe (salt and acid). I’m taken with all her suggestions for salad.

Roasted cauliflower

We were gifted some delicious ramps. Some are going on the grill for a few minutes dressed with a little olive oil, salt and pepper. Then some Caprese with a little ramp pesto in lieu of basil.

Tonight was pretty funny. Our neighborhood had a food truck and I ordered for S. He was in absolute heaven eating restaurant food. I think he was smiling the whole time! Haha! He’s in the best mood now.

He has been eating my dinners for 10 weeks straight, poor kid.

It sounds like the classes were easier if there was only homework and no tests.

Easy night here - rotisserie chicken breast, pappardelle with cream sauce, ricotta, fresh peas and spinach (purchased and reheated). And white wine. I’m off until next Wednesday. I’ve had to go to my office every day and I am stressed and exhausted. Ready to do some actual cooking!

Trying to check all the stay-at-home boxes (check: sewed masks, jigsaw puzzles, clean closets, binge online series).

Epic fail on sourdough bread. Maybe my house is too cold, so I put the starter in an 78 degree sous vide. Was looking promising, but never passed the float test. Did use the discard to make popovers that were good and just made a weird looking loaf in the bread machine. And put a loaf of commercial sourdough bread in my Amazon Fresh cart.

We’re splitting a local farmer’s market box with local D. It’s been fun to figure out what to do with some produce we don’t usually buy.

@conmama I had to LOL at your comment about the 10 weeks - you are a champ!

We also made due with leftovers. Chicken for H and a big kale salad for me with a chicken chili lime TJ’s patty.

How about skipping the cream sauce? Did you wear a mask or were you the only one at your office?

Why don’t you usually purchase produce from the farmer’s market? Do you usually bake bread?

Veggie quiche’s are good.

@Yankeefan20 I’m not going out since H is high risk on several fronts. This is a local market that delivers boxes with whatever they have each week. We usually go with a veggie box. Quality has been good.

Yes I do bake bread, so that makes the sourdough fail so annoying. Tossing the rest of the (failed) starter in the machine with flour, sugar, oil, and yeast actually made a nice sourdough tasting loaf.

@abasket and @Yankeefan20 , he got a Cuban sandwich (with real Cuban bread!), Rice and beans and a lb. of REAL French fries!

I wanted to order too, and it was hard not to. I’m in the midst of losing the 5 lbs I’ve put on since SAH. My shorts have been so tight it’s uncomfortable. I did sneak 5 fries, though.

@abasket - what did you think of the kale salad?

@Yankeefan20, I’m afraid the pasta wouldn’t have been very good without a cream sauce. This was a prepared item I purchased and is then baked to finish it. Fresh spinach is stirred in at the end. It’s not a heavy sauce. 620 calories a serving, so definitely an indulgence, but we ate it as a side and there are leftovers. :smile:
