Cooking when you’re Staying home

Tonight was Eggplant Involtini, ATK recipe. If you like eggplant, give it a try sometime. Some salad greens tossed with a dijon and maple vinaigrette. Strawberry shortcake for dessert.

We have leftover chicken from taco Tuesday so tonight will be taco salads with arugula, Mexican corn, avocado, cotija cheese, fresh salsa and chicken.

Too hot to stand over stove and make the chicken, so burgers on the grill and tomato, red onion and blue cheese salad.

I’m Costco cheating. Orange chicken over cauliflower rice and snap peas. Throw it all in a bowl!

Did a tuna Mac salad since it is too hot. Did 5he mac in the instapot. No hot burners. Microwaved asparagus and had some sourdough bread.

We ordered 5 guys with door dash delivery for dinner today. It was delicious!

Saved that Macaroni Salad recipe @Bromfield2. Will have to leave out the capers , though since H dislikes them.

@FallGirl I love capers. Can you just leave them out of the portions for your husband?

Doing take-out tonight from our favorite Indian restaurant.

I am making a huge pot of pho (4 gallons of broth). Will share it with another family.

Beef stroganoff and noodles tonight with a creamy cucumber and onion salad.

Today is going to be Korean barbecue and kimchi fried rice. Long story but I have a random steak that must be cooked. Can no longer recommend Sun Basket, unfortunately.

Dang, I wish I had you as a neighbor. I’ve tried for years to make a good broth. I’ve come close, but not quite there.

Until he left for college, our S had never had good pho due to some food allergies that precluded him from going to restaurants. During his freshman year, a friend of his found a Pho restaurant that catered to people with food allergies. For him, that was a great find: Pho, Banh Mi, coffee, tea,…

@Rivet2000 Your son goes to Stanford, right? (or MIT? lol). They should have plenty of good pho restaurant in Palo Alto. What is he allergic to? And where do you live? I think I have perfected the art of making pho, I think.

One of my best friend is Haitian. Her 2 kids’s favorite food is pho, the boys asked for Pho every week. Unfortunately we don’t have any VN restaurants within an hour drive from us, so I am their regular supplier.

We had shake shack to go tonight ?

Dinner tonight was grilled marinated chicken from Trader Joe’s, roasted garlic potatoes and Brussels sprouts, along with my weekly challah.

@Nhatrang He goes to Stanford. There are plenty of options there, but he is allergic to nuts and peanuts. That makes certain cuisines problematic. Luckily he does have one option, and he has been there several times.

Really didn’t want to cook tonight - but did.

Sheet pan dinner of kielbasa, potatoes, onion, mushrooms, chunks of poblano pepper, herbs and spices. Cleaned out the odds and ends from the crisper drawer!

We harvested lots of oregano from the herb garden—drying some, giving some away, and trying to find ways to use what’s left. We made this tonight:

It was excellent! Served the chicken with basmati rice and a mixed greens salad. Tomorrow—oregano and pistachio pesto. I have only made basil pesto.

Anyone have interesting recipes for rhubarb? .
