Sadly I don’t have any parsley, @doschicos - but that recipe looks great - I am a big fan of Ina. It’s a huge package (thank you, Costco) so that will be round #2.
I’m at our vacation home for two weeks. Did a big shopping trip before I came to avoid having to go to the store here if possible.
First night we grilled a London Broil and had roasted red potatoes and corn on the cob we got at a produce stand (it was fabulous!). For the first time in two months, I found a pork tenderloin so we grilled that last night. I made a quick stovetop version of mac and cheese. We also had roasted asparagus that I got at the produce stand. I think it was the best asparagus I’ve had in a while. So good!
Dh left this morning to go home for an endodentist appointment (cracked his tooth). I brought a prepared chicken pot pie from Fresh Market that the kids and i were going to have while he was gone, but my son applied for a job last night via email and got a call this morning to come for an interview this afternoon! Of course, the call came just hours after dh left, so I had to drive my son halfway home where my older son met us to take younger son back home. He’s applied for about 6 jobs and this was the first place he heard back from. I decided to just pick up a pizza b/c the pot pie is too big for just the remaining three of us.
Fingers crossed for my son. He’s 17 and really needed a job this summer for help with his somewhat weak resume when he applies to college this fall. The position is for a dog bather ?. His interview went well and tomorrow he has to go in for a trial run. He loves dogs, so hopefully he will pass their test!
I just made that NYT green bean recipe last week. I added a little Bragg Aminos near the end - someone had recommended that. I actually might be making them again tonight - heading in the kitchen now!
1905 salad (recipe from the Columbia restaurant) and Earl Grey Yogurt Cake tonight. Both are recipes my son wants to learn before he goes. It’s been fun cooking and eating together.
Southwestern egg rolls with cilantro cream sauce and Asian Lettuce Wraps. It was restaurant apps done at home night. Leftover birthday cake.
Lunch was leftover lobster turned into lobster rolls.
Pieeeezza! It was gooood. The restaurant owner was happy to see me. I left a 40% tip.

I made a new recipe. Crispy sour cream and onion chicken. It was really good. Very moist and flavorful. I did fry it in shallow oil as the recipe recommends, I might try and bake it once too and see how “crispy” it gets. Squeeze of lemon on top and a handful of chopped garlic chives.

Um, that looks delicious @abasket. I think I’ll try it, too, one day soon. For tonight it’s shrimp and grits. My D saw that I’d purchased grits during my outing to Trader Joe’s today and she suggested it even though she hates shrimp. Her solution will be to top her grits with a poached egg.
I’m also making chocolate babka because she says it just doesn’t feel like shiva without babka ;)!
I did a mix of greek plain yogurt and some sour cream and onion chip dip I had for the recipe above. Patting the chicken dry before salt/pepper and immersing in the dairy also seemed to help the dairy to “stick” to the chicken.
DH is making a veggie lasagna for tonight. With only 2 of us here, it should last for several days, and lasagna tends to be better on day 2 anyway.
Love shrimp and grits and I always top my leftover grits with a poached egg.
@doschicos, wish there were leftovers! First time I’ve made grits and they were great, if a little chewy. I’ve never been great at poaching eggs but today’s turned out well - my D was happy! For some reason, though, the babka filling is a little loose and oozes out when you cut it. No one seems to mind that, either!
Grilled chicken thighs and a tossed salad. Simple but tasty. Work has been insane, we got a new puppy, and we’re looking down the barrel of some not good news from the oncologist this week, so no one had the energy or time to do much.
Yesterday I made chicken wings in the crock pot, with sweet and sour barbecue sauce. That has been my food for a few meals, along with mangoes. Good but gets boring

Scallops, roasted potatoes, and Cole slaw. Our local grocery had scallop pieces on sale this week. I graded them and pan fried the larger pieces tonight. The smaller pieces will go in a fish chowder on Friday.
Mixed greens salad and grilled buffalo chicken wings with blue cheese dip. D made zucchini bread and we had it after dinner.
Flank steak and baked cucumber Italian style. H had beer and I had glass of Sauvignon Blanc.
Was a lovely night so we dined al fresco.
Roast Chicken taco bowl over Mexican rice with all leftovers tonight. A family favorite.
