Cooking when you’re Staying home

This is the quinoa salad - https://www.foodandwine.com/recipes/quinoa-corn-and-black-bean-salad. My H doesn’t like heat so I didn’t use the jalapeño and I would recommend increasing the dressing by at least a quarter, the quinoa soaks it up. I didn’t do that so I squeezed a lime on top before serving and also topped it with chopped scallions - it was delicious. The arugula salad is an Ina Garten recipe - https://www.foodnetwork.com/recipes/ina-garten/arugula-watermelon-and-feta-salad-recipe-1949660 and I did the caprese salad on individual small skewers drizzled with balsamic glaze. Together with the assorted (crab, turkey, and beef) sliders, dinner was a big hit. And the Anderson’s custard was a great surprise and everyone built some incredible sundaes!

Dinner tonight will be breakfast using up the challah I baked on Friday for French toast alongside some chicken and apple sausage I have in the freezer.

^^^I’ve made that watermelon and get salad; it’s really great. Yesterday, I made a grain salad from Allyson Roman’s cook book–faro with toasted fennel, basil, and lemon. We also had roasted aspargus and haddock with oregano pesto sauce.

Last night was the Brazilian Seafood Stew, Moqueca, I make regularly as they had the dry sea scallops for $9.99/lb again. Strawberry shortcake for dessert.

Tonight will be Salad Nicoise with fresh grilled salmon subbed for tuna and asparagus for green beans.

^^I’ve made the quinoa, black bean and corn salad, but I also add halved cherry tomatoes and/or avocado when I have them. I can make a meal of it, but DH needs some meat, usually chicken, to go along with it.

@abasket tomato and peach (or nectarine) salad was so delicious. It was a big hit, both of my lunch companions asked for the recipe. And it was so easy

Making baked ziti and salad tonight.

I’m making the one pot pasta with some chicken and a salad tonight.

@deb922 yay! Whenever you pass on a recipe you hope that it works out for the other person! It is so easy and especially with good tomatoes (think August) and peaches it’s so, so refreshing.

After a heavy meal last night for Father’s Day (marinated and grilled tri-tip, roasted red potatoes, grilled eggplant and asparagus with brownie sundaes for dessert), we opted for grilled chicken Caesar salad tonight. Glad we opted for the lighter meal as today has been the hottest/most humid day for me so far in 2020. After being blessed with weeks on end of 70s and low humidity, I dread summer’s hot arrival. Feels like a thunderstorm is now brewing - a cool wind is picking up and the sky is darkening.

Tonight’s going to be another special dinner to kick off our son’s first day with his internship and our daughter’s first day at online summer camp. I baked a few baguettes this morning and will use that to go along with a handful tapas featuring some jamon Iberico de bellota ( a favorite of ours). I made the white sangria from the recipe posted earlier (anxious to try). Strawberries over pound cake with whipped cream for dessert.

Meatless Monday. H will have leftovers from Father’s Day because he does not follow MM. I think I might just make a spicy bean dip - refried beans with chopped jalapeno, onion, garlic powder, shredded sharp cheddar and sriracha mixed together and baked till bubbly. A few tortilla chips and sliced raw red pepper on the side. I have had a busy day and I don’t want to put forth anymore effort! Bean dip is comfort food for me.

Tonight was chicken taco rice bowls with leftover roast chicken and Mexican rice made in the instapot https://www.savorynothings.com/instant-pot-mexican-rice/ a family favorite and also Leftover fruit crisp made with strawberries, blueberries, and raspberries.

Cedar-planked some sockeye salmon and made a salad using my lettuce from the deck box. That box is still going super strong!

My H’s aunt stopped by and dropped off dinner for us yesterday (the running joke in our house is that the silver lining of cancer is that people love to feed us). So we had sweet and sour meatballs, egg noodles and salad.

Grilling boneless chicken thighs tonight and will use up the last of our beets with a salad of sorts.

Leftovers from Sunday and last night for dinner tonight. I love leftover nights.

They are usually my lunch, as was the case today. :slight_smile:

I’m making a sheet pan chicken dinner tonight, with the expectation we’ll have leftovers. Less cooking, especially this time of year, is always welcome.

I’m always open to new sheet pan dinner ideas - if you have any that are super flavorful, please share!

I think I’m going to try an Instant Pot spaghetti and meatballs tonight - new recipe. The weather cooled down a bit and maybe I’ll get two days of food out of this. :wink:
