Cooking when you’re Staying home

I don’t really do lunch. I eat a very late breakfast. Just had it about an hour ago. Toast or bagel w/cream cheese is what I have almost every day.

H eats breakfast at a normal hour, but rarely lunch.

I think I posted the one sheet pan chicken fajita recipe a few weeks ago. But I’ll post it again. It was great.

The sheet pan dinner I’m making is a variation on the sheet pan greek chicken souvlaki and potato one posted here awhile back. I’ll sub different vegs, and leave out the feta, so I guess my variation isn’t very greek.

I can’t find it here right now, but I’m sure you’d find it if you google it.

My Instant pot spaghetti and meatballs was blah. Fine but I wouldn’t repeat it again. I felt like it was flavorless.

@abasket what recipe did you use? Maybe it was your sauce. I use this https://iwashyoudry.com/instant-pot-spaghetti-and-meatballs/ with a really good marinara sauce. I use farmers market when I can, Barilla if not. I like it with frozen meatballs that have seasoning. If blah you could amp up seasonings.

Tonight was burgers on the grill with baked beans and fresh beans.

This is the recipe I used. I cannot use frozen meatballs - I don’t love them, H wouldn’t touch them!

The texture was fine, the spaghetti was cooked, it was a nice saucy without being overly saucy - just didn’t taste that great!

Dinner tonight was really good. H made a NYTimes recipe for grilled steak tacos. The recipe also included salsa that was even better than the steak! It had cherry tomatoes garlic, jalapeños, onions, cilantro, and lime juice.

What are dry sea scallops?

I’ve got a good amount of leftover grilled chicken from last night, so my kids have requested my doctored up version of that creamy garlic one pot pasta, where I add diced grilled chicken and green peas.

I am trying to minimize my carbs lately, so I’ll probably make zoodles for myself and mix in a bit of chicken and grated parmesan cheese.

Funny- I ended up making spaghetti and meatballs last night too. We use the ground turkey meat. I’d taken out chicken to make a chicken and broccoli dish in the instantpot, but my order from Amazon, with the oyster sauce (for the recipe) and the mandoline didn’t arrive (now scheduled for “today or tomorrow”- wth?? I have amazon prime) I just made spaghetti and meatballs and a salad.
My air fryer is scheduled to be delivered tomorrow, so lots of “cooking devices” (as a friend’s dau calls them) are en route.

I was going to make gazpacho soup tonight but I don’t have enough room in my refrigerator for my soup pot. :frowning:

Think we are going to have to finish up all the leftover tonight to make room.

Dry sea scallops are taken rigth from the sea. They aren’t treated with anything. Wet scallops are treated with a preservative.

I’ve gotten to the point where I only use dry scallops. You just can’t sear the wet ones without completely hammering them.

Agreed. For all my proteins - chicken, pork, shrimp. Don’t inject what wasn’t put there by Mother Nature. We didn’t grow up with that crap in our food.

Well the package with the mandolins and the oyster sauce arrived. So made chicken an asian chicken and broccoli recipe int he instant pot. BUT, the recipes a found today didn’t use Hoisin sauce or oyster sauce!!! Well, what the heck, I addd them anyway. It was still kinda bland :frowning: DH politely ate it with the rice I made to go with it. I ate leftover salad.

My husband had to have a tooth removed today so he couldn’t eat dinner. My older son was working late, and younger son had “socially distanced“ soccer training. I declared a “fend for yourself” night. A recent college grad who is living with us this summer went and got carryout burritos for himself and my youngest daughter. I have a lot of vegetables that need used up so for myself, I sauteed zucchini, spinach, red pepper, grape tomatoes, onion, mushrooms and feta cheese and made a scrambled egg hash with the veggies. Kind of a relief not having to worry about dinner tonight!
