D starts her HS classes on Monday, so this weekend is her going back to school celebration. Yesterday was charred octopus with caramelized onions and a lemon vinaigrette (her favorite), a spicy Mexican seafood cocktail with shrimp and lobster, and some grill-toasted homemade french bread. Today will be strawberry daiquiris by the pool (hers nonalcoholic) then street tacos with homemade corn tortillas.

I’m doing a version of the eggplant recipe @thumper1 posted on the meatless thread. I picked a small eggplant today at my garden but didn’t have enough for a full eggplant parm.
Instead I browned some chicken in my Instant Pot, salted and drained the eggplant and some zucchini, (dipped in egg and then panko/seasoning)and then layered all that with Rao’s sauce and mozzarella in the Instant Pot and topped with some small less than perfect tomatoes I picked at the garden today. I’m then using the slow cook setting to cook it all in the Instant Pot!
D2 asked for “wet” burritos tonight. I take a large jar of salsa verde and heat it up with shredded rotisserie chicken. I then fill the tortillas with the chicken and salsa verde along with spicy jack cheese and red opinions. Next I top the burritos with red enchilada sauce and sprinkle with sharp cheddar cheese then microwave until the cheese is melted. Top with sliced avocados. I serve with Mexican corn on the side.
Lobster rolls and corn from the local farmstand tonight. Easy and good. I didn’t have to cook or clean the lobsters. H did that. 'D and I did the rest.
I made it without the bacon. Then I made an iced matcha to go with it! Basically grilled cheese but with shredded cheese, tomato and then good bread coated with parmesan cheese and everything bagel seasoning. Fast, easy, GOOD.
It is my D’s birthday in a few weeks and we are planning to have her and her boyfriend over for an outdoor poolside distanced picnic. (H and D work together so while she social distances from me she really doesn’t have to).
She loves a ice cream cake with fudge from Baskin Robin but I thought this year about making ice cream sandwiches. I am thinking chocolate chip cookie, a layer of fudge, ice cream and topped with another cookie. Any tips or things I should be aware of?
Maybe just think about what type of chocolate chip cookie result you want if you’re baking them. Thick? Soft? Thin and crispy? If anyone likes nuts you could roll the sides in chopped nuts - or sprinkles!
Also you might be able to find an ice cream flavor that has a stripe of fudge through it (so you don’t have to use a separate fudge product???

For years, when my son was in elementary school, I ordered ice cream sandwiches for classmates from BR. Chocolate and vanilla. Why try to invent the wheel?
If she “loves” their ice cream cake with fudge, maybe she looks forward to that every year and might be disappointed to have that tradition end? And possible good way to explain your family celebrations to her boyfriend. When I think of birthdays, I think of cake! Have fun!
@bookworm- I love to make homemade things but She loves a specific type of cake from BR. It has to have the chocolate fudge ribbon on the top and along the edge. I should just order the cake and be done with it. It certainly would be easier. @abasket from what I’m reading you want to under bake the cookie. Also it’s advisable to not just use a regular recipe. A fudge swirl ice cream would be easier but I want to try to replicate the fudge ribbon topping of the BR cake.
My mom’s house lost power from the storm that rolled through the other day. She packed my freezer full of her inventory and told us to eat whatever couldn’t fit. What do do with a few random lamb chops (not enough to grill and feed all of us as the main event)?
