Cooking when you’re Staying home

^^^ All those delicious spices!!! I bet it was amazing!

I made a lazy and not entirely healthy dinner last night but let me tell you it was delicious. I called it “Hillbilly Dinner” haha. Kind of a take on a chicken bowl they have at Kentucky Fried Chicken (so I’m told) and a take on a popular food truck item around here.

Warmed up some Bob Evans mashed potatoes. (recommended for fast mashed potatoes - really they are quite good - find them in your local grocery store). Smear about a serving size in a bowl.

Microwave an ear of corn and take off the kernels. Add 1/2 an ear of kernels per bowl.

Top with some chopped grilled or crispy chicken (like Tysons or whatever)

Top with steamed broccoli

I made a little chicken gravy out of Better Than Bouillon and spooned a couple T around the perimeter of the bowl.

Topped with a little shredded cheddar.

Drizzled some sriracha.

OMG, it was so delicious and comfort food! H’s dish was modified (he won’t eat broccoli or sriracha - served him some peas on the side. He loved it.

^^ Oh, also - while a minor detail but to me the last touch that makes the dish inviting and I love the taste…herbs on top - in this case fresh parsley and garlic chives.

Just ordered 30 pounds of Hatch green chili ?. I’ll roast them on the grill, peel them, then divide into vacuum sealed bags for freezing. Lots of work, but I must have good green chili on hand - always…

@abasket that grilled cheese sandwich recipe you posted above looks amazing! We are drowning in tomatoes from our garden so I’ve been eating BLTs several times a week for lunch but I’m going to have to try your sandwich. But there is no way I’m leaving put the bacon like you did. ?

^^^ I only left out the bacon because it was “meatless monday!”!!!

@abasket oops! I missed that part! I thought maybe either you didn’t like bacon or don’t eat it for other reasons. However, I’m sure it still tasted good without it.

How did I miss that grilled cheese recipe?!?! Looks so good.

Speaking of grilled cheese (and meatless Mondays), I’ve been on a kick with adding carmelized onions and balsamic sauteed mushrooms to mine. Gives it a “meaty” vibe without the bacon (not that I’m one to say no to bacon).

Served it with tomatoes, fresh mozzarella, and a bit of EVOO and balsamic glaze. I love using up stuff from the garden.

Those cherries would be good on chicken or added on top of a grain vegetable bowl.

@mom60 H also grilled a few chicken breasts. I ate part of one today for lunch with some of the leftover marinated cherries.

Carnitas tonight. Guacamole. Also made a new easy salsa that is a mix of fresh ingredients and a can of fire roasted tomatoes that is SO SO good!

In honor of my hubby’s bday today, my girls and I assembled an epic charcuterie board for dinner. Served with some of his homebrew and finished off the meal with cookies from his favorite Italian bakery. It was <chef’s kiss="">. </chef’s>

Back on the healthy meal train tomorrow. ?

Great summer meal tonight–yellow gazpacho, tomatoes (yellow, red, and green heirlooms) with balsamic glaze and burrata, corn-on-the-cob, and jalapeño poppers (jalapeño pepper from our garden that were seeded and stuff with Gruyere cheese/cream cheese and chives and wrapped; with bacon. All the veggies were from our garden or a local organic farm stand.

@Bromfield2 - I love gazpacho - is yellow just with yellow tomatoes, or…?

Also, our jalapeno plants are producing like crazy now, had no clue what to do with so many. Thanks for the inspiration - putting poppers on the menu this week. :smiley:

@DeeCee36 We used yellow heirlooms–had a bunch that ripened.

Here’s the recipe I used for the poppers–I baked them. My D wanted to fry them, but I didn’t want to deal with the stove clean-up.

I saw a photo of jalapeno poppers that was similar to above but then wrapped with a yeast type bread on the outside - sort of like when you do crescent hot dogs!

I do have gobs of jalapenos/sriracha peppers!
