Hi, I'm interested in Business and the social sciences.
Thus, I'm mainly considering AEM and labor relations. However, can anyone tell me their thoughts on the policy majors in Human ecology? I might be interested in that. Thanks!

well first of all, AEM is the only one out of the 3 that is an undergrad business program
I'm applying to PAM and I can't sum it up better than what Cornell itself has written:
"PAM majors employ theories and methods from economics, sociology, government, and psychology to analyze public policy impacts on society. In the major students will learn to apply theories designed to explain the development of government policies addressing social issues and how private corporations interact with government to affect the well-being of society. Furthermore, students will learn to analyze management and policy decisions that affect individuals, groups, businesses, and different sectors of society."

It's not an undergrad business program, it's basically focused on Policy, but of course you don't need an undergrad business degree to go into business.

I was looking into this major as well. After undergrad, will it be difficult to find a job after graduating with this major?

I honestly doubt it. First of all, you will have a Cornell degree. Second, PAM is a lot more practical and applicable to the real world than some other majors like English Lit, Philosophy, East Asian Studies, and pretty much all the humanities majors in CAS, but they still find jobs. (btw I'm not putting down those majors, just pointing out they're not as easily applicable to the job market). Also, your undergrad major is not that important...getting a BS from a college like Cornell shows that you're intelligent, hardworking, and a good learner, I doubt you will have trouble getting a job.

Anyway I'm taking my degree to Law school, so I'm not too worried.
