How are course numbers viewed later on when you're applying to grad school? I'm looking at several different courses to enroll in but two of them are literally the easiest courses you can take in the respective subjects. I could go into a more advanced Spanish, but I'd like to start a new language, and the other is just because its the way it works out with my other classes. Does it look bad later on to see that the course numbers are so low? Should I avoid basic intro classes if possible? Or is it more about the grade you receive, and course numbers play little to no part in it?

It doesn’t matter, each school has different system. Duke’s intro level class are usually low in numbers like Math 31. At other school it is Math 112 something like that. It doesn’t mean that one is better than the other.
Grad school care more about what the course is, not the number. It doesn’t look bad if the number is low, it looks bad if you take a lot of intro classes and don’t ever go into advance classes. Course number plays little in part but the courses it self, like what course is, is important.
