What happens if I don’t decline the schools I don’t plan on attending by SIR due dates (keep in mind I’ve already SIR’d to the school I plan on attending)? Is it better to decline said schools ASAP?

Out of courtesy it is best to decline them. If you decision is made, I’d decline the other offers and be done with the process.
