So after being deferred, I sent a letter of interest to my regional counselor (close to 2 weeks ago) and then a follow-up email (10 days ago) and I still haven’t gotten a reply. My question is, how do I know that my application has been updated with the latest information from my email that I sent?
The admissions office is busy - more so now than at perhaps any point in the year - so it isn’t all that surprising that replies to e-mails take a while.
If you want to be sure the info has been included, call admissions and ask.

If your email doesn’t require a response beyond “Thank You,” then I wouldn’t expect a reply. I’m sure they get hundreds of these emails and they have far more work that requires attention.
I’m sure it’s nothing serious. Like NotVerySmart said, admissions is very busy and they probably just did not have time to reply yet.
