Do colleges really care about your senior classes

From 9th-11th grade I really challenged myself and took 3-4 honor classes a year. This year I slacked off. I am only taking 1 honor class and 1 class I can consider an AP. However I already took the highest math, history and science courses at my school that weren't AP. Here's my schedule for this year.
English 12 honors
Statistics
Principles of Bio-medical Science (at the end of this class i have the opportunity to take the AP biology test)
Art (I had to fulfill my school requirement and take a VPA class)
Cooking
Economics

I have always been an A-B student and my SAT score is above average at 1710. I also have a decent amount of volunteer hours at a hospital. Do you think this will have a big effect on my admissions? The hardest college I am trying to get into is the University of Miami.

Schools with holistic admissions reading will typically consider the rigor of your senior year schedule along with your past schedule rigor.

Yes, schools do consider your Senior year class rigor and like to see that are continuing to challenge yourself.

Your typical state flagship would probably be happy with that set of courses and test score. Miami with that set of courses and test score is a bit of a reach.
