I plan to enter Economics grad school right after college. My school offers two options for honors in the economics major: write a thesis or take advanced theory classes. I read somewhere that advanced theory classes would matter more than a thesis in graduate admissions. I could take both, but the problem is that I expect my senior year to be extremely hectic what with graduate math and advanced economics classes. Should I double the stress and write a thesis to prove my research abilities?

if you're taking graduate math classes and advanced economic theory classes, a thesis might not be necessary.
a thesis, however, will prove to the profs reviewing your app about your legit interest in econ, your persistence, research abilities and capacity to work with little guidance.
AND, writing a thesis would be something your LOR writers can rave about.

i would recommend getting solid grades in the grad math classes and the adv ec theory classes.

Are you crazy not to write a thesis? You need to show that you can do independent research.

WRITE THE THESIS. If you have time after all, you can take the advanced theory if you want. But you need a writing sample and something for profs to talk about.
