I plan on taking 2 subject tests but feel like I won't do well on Literature, but well on Math II. So, if I am applying to UC's, will I have to send both scores or can I just send Math?
I'd rather not take 2 but just 1, but it's required for another school I am applying to.

If it’s required for a school then…yeah. You’ll have to send both scores.

On a side note though, if you don’t think you’ll do well on Literature, why not just take a different test?

When you send scores through College Board it will let you choose which scores to send. If you use the free score reports, however, you won’t be able to see your scores before you send them. But I would agree with kitkat and just not take Literature. You can choose which tests to take as late as test day. I personally thought Literature was very hard.

I need another subject test for other schools (schools I most likely won’t get in to) I am applying to, and my best bets are either Literature or US History but I forgot a lot of information about USH after I finished my AP class so I decided to go with Lit. Since I am taking two for sure, is it possible to just not send my Lit score and just send Math?
