Do colleges care which specific honors classes you take? Like if I take Law 1 Honors or Marine Science 1 Honors in senior year does it matter that it is a level 1 course?
It depends on how selective the colleges are that you want to apply to. For most selective colleges you want to make sure that your GC checks the “took most rigorous course load offered” on the Common Application. Only your GC knows what they consider this to be, so ask them.
^^^I agree. But I would say that admissions officers look at the actual class taken as well as the level of the class.
