Does anyone know how difficult it would be to take on an additional major or minor if I’m going into engineering? I’m sure it’s not possible to do both architecture and civil/environmental engineering, although I would love that… Could I still possibly minor in art, a foreign language, or business though?

Architecture is a 5 year program with very little overlap with other majors. Double majoring in it would likely make your stay at vt 6+ years. This is not something you want to do.
that combination isn’t too practical or necessary. I would consider getting your bachelors in one and if the need is there to get a masters in the second subject. or if you really want to double, then another university that has a pre professional architecture program would probably allow more space to double.
