how hard is it to do 2 majors, such as Biology & Russian?

It's possible to organize, may be more difficult to do. Lots of people dual majors each year. I believe this would actually be a dual degree, a BS in Bio and a BA in Russian. I don't know if that's any more difficult to do though.

With the language distribution requirement, though, you may not need to take many more classes to earn the Russian major above those which would be required anyways.

It's definitely doable (especially if you do a double major rather than a dual degree).

There will be little overlap if any if you're doing a dual degree...but whatever elective hours you need for one degree will be supplemented by the other.
Check out the degree plans for both:

And compare it in terms of workload and number of hours.

the links are very helpful. The problem with deciding which major(s) is that there are so many choices & so many other fun/interesting subjects to do. My daughter will have a hard time making that decision..
