Let's say that I got into a school via early action/decision. I know that this information is off-the-record, but if I apply to more colleges through regular decision, would they have any knowledge about my early admission? Is there any way/chance that they would be able to acquire that information?

If you apply early decision you HAVE to withdraw all other applications (RD, rolling, and EA) if you are accepted. If you don't, the other institutions could very well find out and all would likely rescind any offers that were made. If you apply EA, I am not aware of any way they would acquire that information...EA is not binding.
