if i didnt apply early action, does that mean my chances of getting into the school is less? Like Emory, UNC, Rice?
anyone know the due dates for those schools?

Early Action is more competitive, but it can get rolled over (deferred) to Regular Decision if you don’t get in the first round. But they don’t punish you for not doing Early Action; the only benefit that it gives you is that it lets you find out earlier whether you’re rejected or accepted.

Does that mean if you have less than competative stats you have a better chance RD?

^
No, generally EA acceptances are higher. I was recently reviewing Syracuse acceptance rate, overall its around 53%, those who applied EA… acceptance rate was nearly 78% according to collegeboard.
