Eating healthy recipes & ideas

I thought it might be nice if we got together a thread for some healthy recipes, ideas, etc.

A few obvious ones, such as drop soda (or if anything at least move to diet) and drink more water.

Here's a recipe I made last night that I found to be both surprisingly delicious AND healthy: Balsamic Chicken and Fresh Mozzarella Recipe - Allrecipes.com Those of you in a dorm won't be able to make it, but for those in an apartment it works well and is very easy to make, even for an inexperienced cooker.

Some breakfast ideas:

Grapefruit

Low fat/light yogurt

Strawberries, grapes, pineapple, etc.

Eggs on a whole wheat english muffin

Oatmeal, but not the store brand type with all the sugar

Anyone else have any other ideas? Especially for lunches. I am also really interested in healthy sides, everything I make either seems to accompany rice, pasta, or bread.

I like to sautee two cloves of garlic with a handful of cherry tomatoes and spinach in olive oil and balsamic vinegar. It makes a wonderful low fat topping for pasta, especially gnocchi. Cheaper, healthier, and tastier than buying sauce in a jar. I’m a long term vegetarian, so most of my food revolves around pasta:p
