I am torn if I should pursue an Econ major with a statistics minor or pursue a Econ and Finance double major.
In the future, I am open to going to grad school but would prefer to get a job after completing undergrad. Which one should I do?

What kind of job do you want to get?
From what I can see elsewhere you are still early in the process. I would recommend:
Looking at your school’s curriculum to see if the double major is do-able. At many colleges econ is in the liberal arts school and finance is part of a b-school program. To double major you might have to meet all of the core requirements for the liberal arts as well as the b-school which could be difficult to get done in four years.
At some colleges you need to apply directly to the b-school and double majoring in a business discipline may not be do-able if you are in the liberal arts school.
If the double econ/finance major is available I would still start off by taking some classes in all of the areas and see what best fits your interests and aptitudes.
You can talk to people in career services at the college about the opportunities hat may be available to you with the different combinations you are considering. (For example where people with those majors have got jobs, if getting the dual finance major gives you different interview opportunities from the b-school etc.).
Either combination would be useful.
