ECs left off Application; are they worth the College knowing of them

After conducting my alum interview recently, it was obvious there were many many items I could have included on my application that I simply left off the list. Such as the fact that I've spent two semesters working with CDC students for a class we have at my school, or working VBS camps as a camp leader. I never really liked the idea of resume dressing, so when I pieced together my application I plain forgot about some activities because they're just so normal to me. So the question:
Should I just chance it and let them have what they have and make a decision from that, being that I'm weird and hate considering some of the things I do as "community service?"
Or should I alert the University of the lack of these items on my resume and, if so, how should this be gone about (i.e an email with a list, paragraph format, etc..)?
